Ingredients
- Toppings:
- 3 tablespoons sugar
- ½ tsp. ground cinnamon
- Cookies:
- 1 ⅓ cups all purpose flour
- ¾ cup sugar
- 2 tsp. baking powder
- ¼ tsp. salt
- 1 tablespoon ground flax seeds
- 3 tablespoons water
- ½ cup vegan margarine
Directions
Preheat oven to 400F.
In a small bowl, stir together sugar and cinnamon and set aside.
In a medium bowl, stir together the flour, sugar, baking powder, and salt. In a small bowl, stir together the flax seeds and water. Add margarine and flax mixture to flour and stir until well blended. Shape dough into 1 1/4" balls, roll in the cinnamon sugar mixture and place on cookie sheet. Bake for 8-10 minutes. Remove from oven and let sit for 2-4 minutes before removing and place on cooling rack.
Meg's Note: Make sure butter is softened.
