Ingredients
- 8 ounces tofu, firm
- 4 teaspoons olive oil
- ¼ teaspoon turmeric
- 4 slices fakin bacon, Or veggie sausage crumbled
- 2 teaspoons scallions, chopped
- ¼ to ½ cup tomato, chopped
- salt and pepper, to taste
- fresh parsley, chopped
Directions
Heat oil in a medium skillet on medium heat. Crumble the tofu into the skillet into scrambled egg sized pieces. Add turmeric. Stir until the tofu is the color of scrambled eggs. Add the fakin bacon, scallion, and tomato. Continue cooking 1-2 minutes, or until the scramble is warm. Salt and pepper to taste. Sprinkle with parsley and serve.
